This is going to be a quick one–been a busy night! Tomorrow is FRIDAY wooooohooooo!
I was super excited to bring my Healthy Joe to work today for lunch–even better than last night, especially since I ate it COLD! Yep that’s right, COLD! I pretty much can and will eat anything cold–pasta, pizza, veggies, Sloppy Joe meat…I love cold food!
I had NO idea what to have for dinner, ever have one of those nights? I was trying to figure out how to cook Eggplant since I had some in the fridge but I’ve never cooked it before and every recipe I looked up had the work FRIED in it!
I ended up using
- Summer Squash
Stuck it all in a pan and sauteed…
It actually turned out really good since I was almost certain that it’d have no flavor and I’d be going in the trash–I was pleasantly surprised! 🙂
It definitely wasn’t enough to satisfy me, it’ll be more of a side dish in the future. I basically just picked around the kitchen a bit before leaving for the gym where I did
- 30 min Incline on Treadmill
- 3×10 Leg Press
- 3×10 Rowing Machine
Me today=1 SORE lady! Jillian kicked my butt last night so I took it easy!
Before the gym I OF COURSE had my delicious Green Smoothie too! Oats, Spinach, Banana, Flax, Almond milk…you know, the usual!
When I came home I just couldn’t resist a few of these babies from Late July.
OMG the PERFECT snack! I’ve definitely found it difficult to find yummy organic munchies but I think I’ve found a WINNER! I can’t get enough of them, which may be good or bad but they’re definitely going to be a staple in my pantry! 🙂
