Happy Tuesday! 🙂

I’m so glad everyone liked the Zucchini Wraps–those of you who try them have to let me know how it turns out for sure!

Ugh it was so hard to get up this morning after 4 days of sleeping in, and by sleeping in I mean till 7ish. My body is just programmed to get up early now, it’s terrible! 🙂 But it was a bit difficult to get back into the 4:30 wake-up routine, however, I managed and made myself some yummy eggs and turkey sausage!

I always like to cook my eggs a little longer so that they’re not SUPER runny. Yum! I haven’t had egg yolks in a while and they were just as delicious as I remembered.

I brought some turkey and hummus for lunch today with some of the juicy cantaloupe that I cut up yesterday.

I’m really excited about the Body Bugg that the Boo bought me for my birthday

bodybugg_image_largeI wore it all day today, at work and all! I ran into a trainer at the gym and she told me that it’s definitely going to make me aware of what’s going one, how much I need to eat in comparison to how many calories I’m burning. I have a really hard time knowing just how much I should be eating and where my nutrients should be coming from. As you can see I AM trying and this will definitely be a big help. Next week a Body Bugg coach is actually going to CALL me for a 1 hour session to explain how it works and what I should be looking for! So cool!!!

On the way home from work I snacked on half a Flying Vegan bar, they’re so delicious!

I made myself such a great smoothie today filled the usual–I hadn’t made one for a few days and was definitely craving a huge glass of green yummyness!

At the gym I did:

  • 10 min. Walking on Incline
  • 10 min. Eliptical on full Resistance
  • 6 min. Runnin on Treadmill (I’m slowly improving, yay)

We headed down to the weight room today with all the macho muscle men and I felt pretttttty cool lifting my 8s! 🙂 It was fun!

So a great friend of mine who has been a Vegetarian her whole life just became Vegan a few months ago and is sharing an awesome VEGAN POTATO SALAD recipe:

  • Unpeeled medium chopped potatoes – boil until fork tender with a pinch of kosher salt
  • Diced red onion
  • Diced celery
  • Diced red,green and/or orange pepper
  • Diced dill pickles
  • Vegenaise Dressing (available at Henry’s)
  • French’s Yellow Mustard
  • Salt & Fresh Ground Pepper
  • After boiling, rinse potatoes and refrigerate until cold and firm.  Mix all ingredients to taste.

How delicious does that look?? She said that she was a bit skeptical because she’s not a huge fan of mayonnaise (just like me) but that it turned out to be really yummy! Big thanks to my friend for sharing this delicious recipe–I’m sure we’ll be seeing a lot more Vegan recipe posts! 🙂

Today has been 1 looooooong day! I haven’t been feeling too well and I’m pretty sure it’s because I need to catch up on my sleep–I wake up everyday at 4:30 and I’ve been getting to bed pretty late.

This morning I had a super light super weird breakfast since I wasn’t in the mood for anything really and I think I was half asleep when I put it together

Yep that’s right…a boca Cheeseburger with Eggwhites! Like i said…I think I was still asleep! 🙂 Oh and I of course had my Rachael Ray mag to wake me up a bit! LOVE HER!

So I dragged myself to work today and brought along some turkey and hummus as well as a Mini Quiche from the other night!

Todays gym trip was not very successful as I think I pushed myself a little too hard on the treadmill and got a bit light-headed. I ended up getting off after 15 minutes, went to the eliptical and did about 5 minutes on there and was Donzo! I’ll call today my rest day! 🙂

So I got home and wanted a little snackie to hold me over until dinner and I grabbed one of the bags I recieved from Kay’s Naturals

I was really excited to try these after reading about their products:

but after selecting the Cinnamon Toast Pretzel Sticks I was NOT disappointed! Let me put it this way…they were like mini healthy, protein filled churros! 🙂 How could you not like that? I opened the bag only wanting to have a little taste before I started making dinner

Before I knew it I was done and surprisingly satisfied! I didn’t feel bad finishing the bag at all since it only has:

  • 120 Calories
  • 9 g Carbs
  • 6 g Sugar
  • 10 g Protein <—Yep!!  How great is that? Not to mention it’s Gluten Free!

 

I can’t wait to try the other bags! Like I’ve said before, I am a HUGE cereal girl, absolutely LOVE it and could eat it probably for every meal throughout the day! So I’m pretty excited to try some — I have my eye on the French Vanilla for tomorrow morning YAY! I’ll for sure let you guys know how they are!

So I put off din din for a while since I wasn’t too hungry and I decided to use my 8 LB weights  for

  • 3×10 Bicep Curls
  • 3×10 Dead Lifts w/ Hammer Curls
  • 3×10 Lunges w/ Bicep Curl
  • 10 minutes of Abs

I guess I made up for my lack of energy at the gym!

Once I got hungry I decided to make another round of some yummy veggies

I just sprayed some PAM on the pan and sauteed for a bit! The Boo made some chicken and slapped it on top of my beautiful veggies just in time for a picture

I only ate about 1/4 of the chicken, mostly just stuck to the veggies!

I’m finally done blogging earlier tonight! I think I might cuddle up with The Boo for a bit and RELAX…what an idea! 🙂

Happy Sunday–I hope everyone had a fantastic weekend!

Wow am I tired! It’s been a long weekend and I’m super excited to catch up on some beauty sleep tonight…I have a long week ahead of me.

Friday night The Boo and I were planning on going out with some friends of ours after work–I didn’t feel like I’d have enough time to go to the gym so i did a little workout of my own at home.

  • 2 min. running full speed on treadmill
  • 5 min. strength training
  • 2 min. running full speed on treadmill
  • 5 min. strength training

I repeated this for about 45 min to an hour and boy was I pooped! I was kinda bummed at first that I wouldn’t be getting a good workout in before a night of drinks and yummy food, but I definitely burned some major calories!

Later that night before meeting up with our friends I tried some Newman’s Own Organics  Apricots–I’m obsessed!

These are so delicious and so convenient for me since I’m such a snacker–they’re a nice little treat when I start getting picky and don’t know what to eat. I found that these definitely satisfy my sweet tooth and munchie behavior! I can’t wait to try some others…

So Friday night with the friends was a BLAST! We went to El Torito and had some Mojito’s (YUM) while we were serenaded by many karaoke singers–toooooo funny! We then headed to Capri Blu a cute little bistro and wine bar–we went there for a drink and to hear a good friend of ours sing. I tried my first EVER martini, filthy martini to be exact…don’t know if I’ll be trying it again, twas a bit strong for my liking!

Sat morning we forced ourselves to get up and get our butts to the gym–I always feel it’s a necessity after a night of alcohol and greasy food! I did my usual routine–walking on an incline with the occasionl run!

Sat night we decided to try something new and make out own homeade SANGRIA!

We put some frozen fruit at the bottom of the pitcher and poured in some Merlot–it actually turned out pretty yummy!

Breakfast this morning was DELICIOUS–I haven’t had oatmeal in a while so I made an amazing bowl with

  • Almond Milk
  • Oats
  • Honey
  • Scoop of Almond Butter
  • 1/2 Banana

LOVED IT!

Anyway tonight I made one of my favorites–Mini Quiche! They’re such a great light snack!

I started by sauteeing Spinach and Mushroom

Combined it into a bowl with the following

  • 1/4 cup onions
  • 3/4 cup egg substitute
  • 3/4 cup shredded jack cheese (I used Mozzarella)

Mixed everything together and evenly spooned it into a muffin tin that I sprayed with PAM

I popped them into the over at 350 for about 20 minutes till they look fluffy and delicious–kinda like this

These are super popular with The South Beach crowd–low carbs and calories!

For dessert tonight I just couldn’t resist a tiny scoop of some AMAZING Justins Nut Butter. Yep, I scooped it right outta the jar…it’s THAT good!

Ok well I am BEYOND tired and I want to get to bet before I devour that whole jar! Mmmmm!

Have a Happy 4th!

I’m so excited for this LONG weekend! YAY! We’re going to Arizona to visit our good friends and we couldn’t be more excited to get away for this mini vaca! 🙂 Taking off from work at 1 and then we’ll be off and on the road for 5 nice long hours–I better start warming up my vocal chords now in preperation for my car singing!

So I woke up this morning so happy about the holiday weekend of course, I went downstairs to pour my morning cereal and then I remembered…..I was out of almond milk! 😦 It was ok though because I still had skim milk in the fridge although it’s been about a month now that I haven’t used it with my cereal. Anyway, I really didn’t enjoy it! I much prefer the Almond or Hemp milk now instead of the skim–it just wasn’t as satisfying like it usually is and I ALWAYS look forward to my cereal in the AM. I seem to be going through it all a lot faster than usual, especially since I started making the Green Monsters everyday.

How yummy does that look!?! This is what I was tempted with at work yesterday. I’m not usually a fan of birthday cake, HOWEVER, this just looked too good to pass up! So I had a few bites and it was just as delicious as it looked!

I didn’t finish it because I knew I wouldn’t be working out today. Yep after 9 straight days I took a much needed day OFF! Follwed by another 4 days while in Arizona but HEY I deserve it! 🙂

TGIF

As happy as I am that today is Friday–classes start next week for the summer and I’m dreading it just a little! I really enjoy the time that I have between semesters to do some things I might not normally have time to do: read, more workout time, try new things in the kitchen or just lounge! It seems like once I’m in school mode I don’t have much time to do anything but work and study–hopefully this summer that won’t be the case.

So I started the morning off with some Muesli

It’s the first bag that I’ve ever tried and I’m LOVING it! I usually don’t have toast in the morning–I’m pretty much a cereal kinda gal. Anyway, I had a piece of toast this morning with my cereal because I wanted to try the HOMEMADE almond butter I made the other day, that’s right, HOMEMADE! It’s actually very easy to make but I’m still proud of myself! 🙂

I spread about 1 cup full of almonds on a cooking sheet and baked for 12-20 min. at 400

Put them in my magic bullet (love that thing) and added EVOO as needed. Just kept grinding until it got the the consistency that I like, which is creamy with a little bit of chunk! Mmmm

Once I scooped it all out I added a bit of honey, put it in some tupperware and stuck it in the fridge!

I enjoyed making it and I really want to try some others…maybe I’ll try cashew butter next!
