Happy Humpday! 🙂 YAY! Sooo close to the weekend!

I’ve been in a bit of a food slump lately. I wake up every morning at 4:30, eat a quick breakfast, get ready and I’m at work for 9 hours–not to mention the 30-45 minute commute I make. By the time I get home I don’t have much time to prepare food so I can digest in time to go to the gym, so I find myself making a lot of the same things, hence the constant Veggie repeat. It’s quick…it’s easy…and once again it was my dinner

Gotta love em! Since I’ve officially made summer squash and zucchini a staple in my diet, I looked up a few assuring facts about them-

  • Great source of Vitamin C & Potassium
  • Full of anti-oxidants
  • Promote Good Heart Health

The list goes on and on! I was definitely surprised and happy to read that research shows zucchini’s improve metabolism and help in preventing lung cancer. Ummm WOW! I have no idea if this is true or not but being an ex-smoker and all, I’ve decided that the zucchini is here to STAY!

I made a lovely Green Smoothie today

  • Spinach
  • Oats
  • Almond Milk
  • Frozen Banana
  • White Chocolate Peanut Butter (yumm)

Before we went to the gym tonight I did about 10 minutes of abs and did tricep kickbacks with my 8 weights.  At the gym I did:

  • 10 min. Eliptical w/Resisitance
  • 20 min Treadmill Incline 7 (ouch)
  • 3×10 Bicep Curls 10 LBS
  • 3×10 Triceps 10 LBS
  • 3×10 Deadlifts w/10 LB Bicep Curl

I’ve never done an incline of 7 on the treadmill before–it was kinda fun being up that high, but I could definitely feel the difference and I worked up a good sweat!

When I got home I was feeling a little creative and happened to have a Red Bell Pepper that I didn’t want to go to waste so I created a little snack

I don’t quite know what to call it yet so it is what it is…Spinach, Red Bell Pepper & hummus! It was delicious AND nutrtious as the peppers are another veggie full of disease fighting anti-oxidants and a bunch of vitamins and minerals! Plus I thought it looked pretty! 🙂

After my little snack I had a great cookie for dessert from Country Choice Organic. They’re made from pure organic ingredients! Ugh, it was so soft and melted in my mouth–I’m not a fan of had cookies, this was perfect!

Today is a GREAT day! 6 months NO SMOKING! Ah I really can’t believe how fast time has gone by—the 1st week was pretty rough and I honestly didn’t know if I’d get this far. But now I can say that I DON’T miss it one little bit and I couldn’t be happier about making the decision to quit! The only thing that got me through the 1st month was exercise—every time I felt the urge to smoke I’d get up and DO something, something active, something that made me realize how good it felt to BREATHE! 6 months later I love this new active, healthy lifestyle and I feel confident in saying that I’ll never smoke again.

This was a big weekend—6 months no smoking and yesterday The Boo and I celebrated our 2 year ANNIVERSARY! :)Love ya BOO! We had an aaaaamazing dinner at Brigantine Restaurant in Poway, I had Broiled Scallop and Shrimp Skewers with a double order of veggies

Before dinner the waiter brought out a HUGE basket of bread which is my weekness–I really could eat bread all day long! So we both had a small piece and asked the waiter to take the basket so we didn’t fill up before the food came out.

After dinner we went to our favorite Self Serve Frozen Yogurt joint in Carmel Mountain–Frutti Tutti=HEAVEN! Such a great night, can’t wait to spend many many more years with The Boo!

Sole Food

Hope everyone has had an amazing week–I’m so happy tomorrow is Friday! 🙂

This morning when I got out of bed and was SO sore that I could barely move, is when I realized I need to switch up my workout routines more often. I used to do those OnDemand workouts ALL the time before I joined the gym, but last night was the first time I’d done one in a while…and I did 2! So my goal is to try and switch things up a bit, whether it be at the gym or not, I need to get every muscle moving so this doesn’t happen again!

Since I wasn’t feeling too good I of course needed some comfort food for breakfast to make me feel better! 🙂

  • 1/2 cup oats
  • 1 cup water
  • cinammon
  • 1 Spoon Almond Butter

I got through my amazing bowl of oats and decided I should probably start getting ready for work since I’d be moving at a VERY slow pace!

I made it through the day and actually started to feel a lot better once I was stretched out!

My Green Smoothie was delicious as usual, especially since I added some Amazing Grass SuperFood in it and put it in my nifty little Amazing Grass cup. LOVE that thing! 🙂

Dinner tonight was SO good!

Those are slivered Almonds that went on TOP of a piece of Sole and on the side of my USUAL veggies of course!

The Boo gave me the bag with the leftover Almond slivers which is like the equivalent of licking the bowl for me so I was a happy girl!

I got a package today from the wonderful people at Deep River Snacks

Their kettle-cooked potato chips are all natural, gluten free, kosher certified, and contain NO trans fat. I can’t wait to try them, THANKS Deep River Snacks!

Tonight’s workout was FUN–I did a cardio video OnDemand with Kendel (love him) and then I did some abs and leg excercises while watching an episode of Regis & Kelly that I DVRed. Yep that’s right…I DVR Regis & Kelly!

Happy Tuesday! 🙂

I’m so glad everyone liked the Zucchini Wraps–those of you who try them have to let me know how it turns out for sure!

Ugh it was so hard to get up this morning after 4 days of sleeping in, and by sleeping in I mean till 7ish. My body is just programmed to get up early now, it’s terrible! 🙂 But it was a bit difficult to get back into the 4:30 wake-up routine, however, I managed and made myself some yummy eggs and turkey sausage!

I always like to cook my eggs a little longer so that they’re not SUPER runny. Yum! I haven’t had egg yolks in a while and they were just as delicious as I remembered.

I brought some turkey and hummus for lunch today with some of the juicy cantaloupe that I cut up yesterday.

I’m really excited about the Body Bugg that the Boo bought me for my birthday

bodybugg_image_largeI wore it all day today, at work and all! I ran into a trainer at the gym and she told me that it’s definitely going to make me aware of what’s going one, how much I need to eat in comparison to how many calories I’m burning. I have a really hard time knowing just how much I should be eating and where my nutrients should be coming from. As you can see I AM trying and this will definitely be a big help. Next week a Body Bugg coach is actually going to CALL me for a 1 hour session to explain how it works and what I should be looking for! So cool!!!

On the way home from work I snacked on half a Flying Vegan bar, they’re so delicious!

I made myself such a great smoothie today filled the usual–I hadn’t made one for a few days and was definitely craving a huge glass of green yummyness!

At the gym I did:

  • 10 min. Walking on Incline
  • 10 min. Eliptical on full Resistance
  • 6 min. Runnin on Treadmill (I’m slowly improving, yay)

We headed down to the weight room today with all the macho muscle men and I felt pretttttty cool lifting my 8s! 🙂 It was fun!

So a great friend of mine who has been a Vegetarian her whole life just became Vegan a few months ago and is sharing an awesome VEGAN POTATO SALAD recipe:

  • Unpeeled medium chopped potatoes – boil until fork tender with a pinch of kosher salt
  • Diced red onion
  • Diced celery
  • Diced red,green and/or orange pepper
  • Diced dill pickles
  • Vegenaise Dressing (available at Henry’s)
  • French’s Yellow Mustard
  • Salt & Fresh Ground Pepper
  • After boiling, rinse potatoes and refrigerate until cold and firm.  Mix all ingredients to taste.

How delicious does that look?? She said that she was a bit skeptical because she’s not a huge fan of mayonnaise (just like me) but that it turned out to be really yummy! Big thanks to my friend for sharing this delicious recipe–I’m sure we’ll be seeing a lot more Vegan recipe posts! 🙂

Well today was officially the last day of my 4 day weekend! 😦 I’m definitely a bit bummed because who wants to go back to work? But I had such an amazing birthday! My best friend of 20 years whisked me away on Saturday for a birthday surprise—turns out we went to see FIDDLER ON THE ROOF! We drove up to Hollywood and had dinner at a great Sushi restaurant and then we walked down Hollywood Blvd to the theater. I’m a HUGE musical theater lover so it really was the most amazing gift—not only was I excited to see it but it turns out TOPAL was starring in it. THE Topal! He’s the man who actually starred in the award winning movie and has played this part for many years, these are his farewell performances and I feel so lucky to have seen it!

Today was a very snacky day for me—I wasn’t really in the mood to have anything too heavy since I’ve been “vacation” eating for the last 4 days. One of my favorite things to eat when I’m not super hungry and I just want a quick and not too heavy something is tuna. I loooove tuna! So today I made a can with:

  • ONLY mustard (no mayo)
  • Red Onions
  • Capers (something new I tried and loved)
  • Pepper

This afternoon The Boo and I went for a long walk at Webb Park in Rancho Bernardo. A great place to go when you want to get out and enjoy some beautiful scenery. I’ll be devoting a whole post to the area so I’ll get back to it very soon–here are some pictures

Before we left the house I brought a little snack with me just in case I got hungry while we were out and about and I’m SO glad I did. Flying Vegan makes THE most amazing bars! They’re so moist and delicious, kind of reminded me of banana bread but without the banana taste–I’d have to go as far as to say that I’m addicted and I’m not even Vegan!!

It was the perfect thing to hold me over during our afternoon stroll. Not only is it absolutrly DELICIOUS, the ingredients just can’t get much better and like the website says: “All ingredients are gluten-free, certified Organic and purchased locally. Each 3 oz. bar contains 80% Raw ingredients.”

Definitely check these out at FLYING VEGAN you won’t be disappointed at all!

After Webb Park we decided to hit up the grocery store and get some food for the week. I came across some Cantaloupe and Honeydew that sounded way too good to pass on so I picked some up–they’re a great snack to have during the week to bring to work!

I just cut them in half, slice them up and stick them in tupperware so they’re way easy to much on.

Sooo a few weeks ago I bought Lentils without really having a purpose for them. I often do this and end up with a cabinet filled with random ingredients, none of which go together. So today I decided to experiment with the lentils in hopes that I’d create something easy and yummy. I got the idea from something I saw while flipping through a magazine the other day–I don’t know what they used as the filling but I thought hey…why not try it with lentils?!?! They ARE a superfood, they’re filled with cholesterol-lowering fiber,  a member of the legume family, and have tons of protein and NO fat!

Super easy, SUPER random, super good! I’d definitely make them again–I thought they’d add a little excitement to the blog instead of my same old, same old. 🙂

I took a day off from the gym today since I’m pretty sore from trying to run outside the other day–my body didn’t handle the concrete very well. OUCH!

My Friday off was AMAZING–so excited I still have 3 more days of this weekend! Tonight is the night I am being whisked away by my best friend for my birthday, she’s not telling me where we’re going except for the fact that it’s not in San Diego and I need to dress semi nice! Ah the suspense is killing me!!!

So last night me and The Boo decided to make our own pizza, something we’ve both never done so we were both a little worried about the outcome!

We started off with a WW Boboli

Once we got the crust out of the bag and on to our pizza sheet, we brushed the edges with a little EVOO

We put a super small layer of tomato paste on the crust and then COVERED it in CHEESE–parmesan and mild cheddar. I’m not a huge cheese fan, I mean I like it on pizza but as a whole i can usually do without it. The Boo however,  is a cheese JUNKIE, so naturally the pizza had cheese overload!

As Boo was piling it all on, I was sauteeing the spinach to add to our toppings

Once this was done we put it on top of our cheese layer and also added some diced tomatoes and onions

How gorgeous does that look? I could have totally stopped here, I mean look how yummy

But we did add chicken so we put that on as well and then baked in the oven at 450 for about 10-12 minutes. We leaned more towards 12 because we both like our crust crispy and that it was!

You can kind of see that we put more chicken on one side–I much prefer everything else so I didn’t really want a lot on my side. Oh and yes I just said my SIDE, that’s right I ate HALF of this baby and enjoyed every last bite! 🙂

Definitely a fun night! 🙂  We were actually pretty pleasantly surprised at how much we enjoyed the pizza, so we’re already coming up with our next creation! The pizza might be making a regular appearance on the blog…stay tuned!

Nothing Better…

than the way cooking onions make your whole house smell, delicious! It’s the little things that make me happy! 🙂

Anyway, I was cooking these up to throw into my usual pile of veggies! LOL I know, I know…I promise this is the last one for a while. I just wanted to use the rest up before they go bad–but look how yummy…

I think it may be an addiction, I really do crave my plate of veggies! I guess I could be addicted to worse–but I’m moving on for now and I promise I’ll spice up the blog a little more with some yummy dishes.
