Happy Humpday! 🙂 YAY! Sooo close to the weekend!
I’ve been in a bit of a food slump lately. I wake up every morning at 4:30, eat a quick breakfast, get ready and I’m at work for 9 hours–not to mention the 30-45 minute commute I make. By the time I get home I don’t have much time to prepare food so I can digest in time to go to the gym, so I find myself making a lot of the same things, hence the constant Veggie repeat. It’s quick…it’s easy…and once again it was my dinner
Gotta love em! Since I’ve officially made summer squash and zucchini a staple in my diet, I looked up a few assuring facts about them-
- Great source of Vitamin C & Potassium
- Full of anti-oxidants
- Promote Good Heart Health
The list goes on and on! I was definitely surprised and happy to read that research shows zucchini’s improve metabolism and help in preventing lung cancer. Ummm WOW! I have no idea if this is true or not but being an ex-smoker and all, I’ve decided that the zucchini is here to STAY!
I made a lovely Green Smoothie today
- Spinach
- Oats
- Almond Milk
- Frozen Banana
- White Chocolate Peanut Butter (yumm)
Before we went to the gym tonight I did about 10 minutes of abs and did tricep kickbacks with my 8 weights. At the gym I did:
- 10 min. Eliptical w/Resisitance
- 20 min Treadmill Incline 7 (ouch)
- 3×10 Bicep Curls 10 LBS
- 3×10 Triceps 10 LBS
- 3×10 Deadlifts w/10 LB Bicep Curl
I’ve never done an incline of 7 on the treadmill before–it was kinda fun being up that high, but I could definitely feel the difference and I worked up a good sweat!
When I got home I was feeling a little creative and happened to have a Red Bell Pepper that I didn’t want to go to waste so I created a little snack
I don’t quite know what to call it yet so it is what it is…Spinach, Red Bell Pepper & hummus! It was delicious AND nutrtious as the peppers are another veggie full of disease fighting anti-oxidants and a bunch of vitamins and minerals! Plus I thought it looked pretty! 🙂
After my little snack I had a great cookie for dessert from Country Choice Organic. They’re made from pure organic ingredients! Ugh, it was so soft and melted in my mouth–I’m not a fan of had cookies, this was perfect!
Is there anyone else that has a weird schedule and a difficult time fitting everything in? What are some quick meals you like to whip up? Do you also have a GO TO like my quick & easy veggies?
I love all veggie dinners! Sometimes I’ll even mix it up a little bit and have a “Neglected Vegetable” night, where I eat vegetables that I don’t normally eat and deserve extra attention 🙂 I usually steam them and eat with a little homemade hummus.
YES my schedule is brutal during school. i eat lots of bars and drink lots of naked juice normally but this semester i’ll need to budget better as far as naked juice goes … lol.
i’m gonna take oatmeal on the go with some dried fruit or something probably. and granola.

Yes! I know that crazy 9-5 schedule and trying to fit in healthy eating and training and commuting…horrible isn’t it?! (But I’m working my way out of that soon!)
My go to meal is a green banana smoothie with some scoops of a great Soy protein powder called Complete – it is by the same company that I take fruit & vegetable supplements. I know I am getting lots of nutrients & whole foods out of it as well as that protein keeping me full 🙂 Tastes SO much better than the whey protein I used to have. YUM!
Hey!! I can totally relate! I am pretty much go go go all day long. I try to fit in my cooking wherever I can (hence why I usually prep dinner before I go teach at night). Go to meals- salads, stir fry, my easy black bean soup, my easy sloppy janes, noodles and veggies in peanut sauce. Great job on the workout 🙂

I often eat oatmeal for dinner. It’s quick and delicious, and I usually don’t eat it for breakfast…

I love veggies too – your first pic looks so fabulous and colorful!! I wish I didn’t have it in my head that I MUST have a meat + a carb with each meal. Grrrr. Perhaps I should wean myself off of this after seeing your yummy meal ideas!

My go to quick meal is portobello mushroom burgers. They cook in a few minutes, throw it on a bun, and dinner’s ready!
Wow, glad to know zucchini is so good for you. My zucchini plant is just starting to produce so I’ll be all set soon:) As for go to meals, salads are at the top of the list. Sometimes I’ll just chop up a bunch of veggies mush up an avocado for dressing and eat up:)
